Ingredients
- about 3 cups fermented sweet tea (from primary fermentation)
- 2 cups pineapple juice
- 1/2 cup coconut water
- 1/2 cup lime juice
Instructions
- 1
Use carbonation-safe bottles; recipe makes ~6 cups (e.g., three 16-oz bottles).
- 2
Mix pineapple juice, lime juice, and coconut water.
- 3
Fill bottle ~1/2 full with fermented sweet tea.
- 4
Top with juice mix, leaving ~1 inch headspace.
- 5
Cap and gently invert to mix.
- 6
Ferment at room temp (70–80°F) ~5 days.
- 7
Carefully check carbonation; refrigerate when ready.
Recipe Notes
- Press your own juice or use 100% bottled juice (no additives).
- If using fresh-pressed juice, heat to ~145°F briefly then cool before use.
- Ratio tweak: 3 parts kombucha : 1 part juice for lower sugar; 1:1 for sweeter.
